Dark ScotchmallowĀ® Sāmores Cookies Recipe
Makes 12 cookiesIngredients

1/2 cup (1 stick) + 3 tablespoons unsalted butter, cold

1 3/4 cup + 2 tablespoons flour (or gluten free flour)

ā1/2 teaspoon baking soda

āā3/4 teaspoon salt

āā1/2 cup sugar

āā3/4 cup packed dark brown sugar

āā1 large egg

āā1 teaspoon vanilla

ā6 oz Seeās Semi-Sweet Chocolate Chips

āā1 lb Dark Scotchmallows

āāGraham crackers
Instructions

Melt 3 tbsp of butter in a saucepan over medium heat for aboutĀ 5 minutes, or until itās bubbling and foaming. Once the butter isĀ amber in color, transfer it to a small bowl along with theĀ browned flecks at the bottom of the pan. Add 1 tsp of cold Ā waterĀ and stir. Let the bowl cool in the freezer for 15 minutesĀ whileĀ you prepare the other ingredients.

Preheat oven to 350Ā°F.

In a large bowl, whisk together flour, baking soda and salt.Ā Set aside.

Place the remaining stick of butter and sugar into a mixer withĀ a paddle attachment. StartĀ on low and mix for a few minutes.Ā AsĀ the butter softens and the mixture becomes creamy,Ā turnĀ theĀ mixer up to medium speed.

Remove the cooled butter mixture from the freezer and addĀ brown sugar, whisking until itāsĀ combined and clumps together.

Scrape down the sides of the mixing bowl and paddle. Add inĀ the egg, vanilla and mixture of butter and brown sugar fromĀ step 5. Mix until well combined.

Remove the bowl from the stand and pour it into the flourĀ mixture. Stir with a wooden spoon until the flour incorporatesĀ and forms into a dough. Stir in Seeās Semi-Sweet ChocolateĀ Chips.

āPut parchment paper on a cookie sheet and place grahamĀ crackers on top. Add a Dark ScotchmallowĀ® on top of eachĀ graham cracker. Then, add a tablespoon of cookie dough onĀ top of each ScotchmallowĀ®.

āBake cookies for 12-15 minutes, or until the cookies areĀ completely flat. Let them sit on the cookie sheet for 1 minute.Ā Then, transfer them to a cooling rack.
